Ginger ale I use 1 cup sugar of choice (raw or white will work), 1 1/2 tblespoons ground ginger (I use a food processor), 1/4 teaspoon ale yeast (bakers yeast will work), and the juice of one lemon (optional or to taste.
Mix in a plastic 2 liter bottle (dont use glass as it may explode from pressure as ginger ale expands fast). Plastic explosion is messy, a glass one could cause injury or worse. I am not experienced enough to use glass for soda and it is recommended to not use glass everywhere I have seen so far.
Fill to one inch from the top of the bottle. Mix inside bottle and let sit in a warm place for about 24 hours. Keep checking the bottle. When it is hard put it in the fridge. Open carefully first time.
Strain the Soda through a sieve and put it in the fridge once the bottle has became hard and the soda sufficiently carbonated. If you leave it out it will continue to ferment and blow up possibly. Refrigerate it and the process stops or slows greatly.
You can see the bottle dimples and is not ready. When you can’t readily depress or dimple the bottle strain it and put it in the fridge.
