Zucchini instead of pasta

Here’s a good way to remove the starchy calories from spaghetti. Julienne or mandolin cut a zucchini and put your sauce and cheese on it. I prefer to blanch the zucchini for just a minute to limber it up and warm it up. This isn’t a pretty picture but it’s a much lower caloric alternative to pasta.

  1. I haven’t tried this with normal zucchini! We have, though, with a spaghetti squash-but it had to be boiled first. I guess it depends what sort of invasive squash you have in your garden. ;)
